Z’s for Zucchini,

A raw pasta treat,

So easy to make,

Even easier to eat ๐Ÿ˜‹

 

Benefits of Zucchini:

A great all-rounder, Zucchini is packed full of nutrition; the highest being Copper and Manganese. It also contains high amounts of Vitamin C, Magnesium, Fibre, Phosphorous and Potassium making it an excellent fruit (yes, it’s a fruit) for:

  • The Skin,
  • Bones/Tissue,
  • Constipation-relief
  • Cholesterol Control
  • Energy Production
  • Inflammation and Blood Sugar Control
  • Nervous System Support
  • Men’s Health (Penis and Prostrate).
  • High Copper (Great for Skin, Bones/Tissue, Cholesterol Control and Energy Production),
  • High Manganese (Great for Skin and Blood Sugar Control)

 

To make vegan Zucchini pasta simply:

  1. Peel 2 to 4 Zucchinis
  2. Push each Zucchini through a spiraliser or use a potato peeler to slice long ribbons from the Zucchini.
  3. Drizzle with a little Extra Virgin Olive Oil
  4. Add a Pinch of Salt
  5. Toss through with fingers
  6. Add favourite topping and Stir through until combined
  7. Enjoy

Topping Ideas:

  1. Home Made Basil Pesto with quartered cherry tomatoes and pine nuts
  2. Cashew Cream Cheese (I use Kehoe’s Kitchen) with torn Basil Leaves and a drizzle of Garlic Oil (crush 1 Garlic Clove and stir into Extra Virgin Olive Oil with a Pinch of Salt) and Black Pepper
